Last night, CARBONE, the world’s most glamorous Italian-American restaurant officially arrived in Dubai, in a spectacular new home at Atlantis The Royal. Major Food Group co-founders Mario Carbone, Jeff Zalaznick, and Rich Torrisi welcomed global icons including Alessandra Ambrosio, Rio Ferdinand and Lennon Gallagher alongside girlfriend Isobel Richmond, as well as Victoria Lopyreva for a night to remember. CARBONE Dubai marks the brand’s tenth outpost worldwide and first in the UAE, ahead of its highly anticipated opening on Monday 6th October.

With Atlantis The Royal already a destination for culinary connoisseurs, the arrival of CARBONE transports guests to 1950s New York in the heart of Dubai, offering world-class dining and an atmosphere defined by glamour, energy, and style. Blending old-school swagger with extraordinary ingredients and theatrical service, CARBONE’S Dubai debut is set to be the most talked about opening of the year.

Inside the dining room, celebrity guests including Damson Idris, Kilian Hennessy, Simone Susinna, Rose Bertram, Romee Strijd,  Kat Graham, as well as Victoria Lopyreva enjoyed Chef Mario Carbone’s iconic dishes - Caesar alla ZZ, Tortellini Tartufo Nero, Jumbo Shrimp Scampi, Veal Parmesan, and the cult-favourite Spicy Rigatoni  - surrounded by chandeliers, Venetian glass mirrors, leather banquettes, and a museum-worthy art collection.

After dinner, the party spilled out onto the shores of Atlantis The Royal for a CARBONE ON THE BEACH pop up. American chart-topping rapper and hip-hop icon Rick Ross delivered a live performance that kept the night roaring well into the early hours. It was the kind of energy only a partnership between global icons such as Major Food Group and Atlantis The Royal could orchestrate: part fine dining, part cultural event, 100% unforgettable.

Inspired by the legendary Italian-American dining rooms of mid-century New York, CARBONE has become a cultural phenomenon and global hotspot since opening in Manhattan’s Greenwich Village more than a decade ago. In Dubai, guests can now experience the brand’s unmistakable mix of culinary excellence and theatrical flair, tailored to one of the world’s most luxury experiential hotel destinations.

Reservations for CARBONE Dubai are now open from Monday 6th October 2025. To reserve a table, visit www.carbonedubai.com.
